Ingredients

2 cups of corn (Fresh, frozen or canned)

1 cup of bell pepper, chopped (Fresh or frozen)

4 6oz salmon fillets (you can use any type of fish)

4 cups of broccoli florets, chopped into bite sized pieces

4 teaspoons of Cajun seasoning (sodium free)

2 teaspoons of olive oil or avocado oil

lemon or lime sliced

4 sheets of aluminum foil (16 inches long)
Instructions
Step 1
Preheat oven to 400F
Step 2
Tear off 4 sheets of aluminum foil about 16-18 inches long and place on a flat surface
Step 3
In a medium bowl add corn, peppers 2 teaspoons of olive oil and 1 teaspoon of sodium free seasoning and coat evenly
Step 4
Drizzle olive oil on Salmon and season both sides
Step 5
Spoon corn mixture onto foil sheet, add salmon, broccoli, lemon and lime. Fold packets tightly to keep steam inside and place on a backing sheet. Cook for 15-20 minutes or until salmon is 145F internally or flaky to touch. Broccoli should be fork tender.
Step 6
Remove from foil packets and serve.
Thyme Tip:
Salt has its place, but it should not be on the table.
